In partnership with Pacific Coast Farmers’ Market Association, Fresh Approach, and Operation Frontline, Collective Roots is pleased to offer free cooking & nutrition classes in East Palo Alto. In April 2010, we launched our first six-class series for parents and children of East Palo Alto Charter School. Soon we hope to add additional partner sites throughout the community.
Operation Frontline’s collaborative program model connects families with food by teaching them how to prepare healthy, tasty meals on a limited budget. Professional chefs and nutritionists volunteer their time and expertise to lead hands-on courses that teach adults, teens and kids how to purchase and prepare nutritious foods in healthful, safe and tasty ways. In each class, participants prepare and eat a simple, healthy meal. At the end of each class, they take home a bag of ingredients to prepare that day’s recipes at home.
During a recent class, parents and children had “a great discussion on meal planning,” writes a volunteer dietitian/nutritionist. “Four or five moms said that they did try the recipes from the last week, and the Spanish omelet was a hit with the families. They all loved getting the bags of veggies to take home. Each family group came up with a meal plan and then shared them with each other.”
