Cabbage Salad with Peanut Dressing
Makes 20-25 servings
Ingredients:
1 large Napa Cabbage (about 1.5 pounds), thinly sliced
1 pound of red and green cabbage, thinly sliced
4 medium carrots, grated
2 cucumbers, peeled and seeded
2 bunches of scallions, chop whites and a few inches of greens
4 Tablespoons finely chopped mint leaves
2 tablespoons finely chopped basil leaves
Peanut Dressing
1 cup roasted peanuts
Directions:
1. Slice the cucumber and scallions into long, thin pieces and toss with the cabbage and herbs.
2. Heat the dressing until the aromas are released, then immediately pour over the greens while tossing.
3. Add the peanuts, toss again, and serve.
Peanut Dressing
Ingredients:
½ cup roasted peanut oil
5 tablespoons rice vinegar or apple cider vinegar
2 tablespoons soy sauce (or Bragg’s liquid aminos)
2 garlic cloves, finely minced
4 scallions, including an inch of the greens, thinly sliced
16 mint leaves, finely chopped
4 tablespoons chopped basil, preferably Thai basil
4 tablespoons chopped cilantro
Squirt of Sriracha (hot sauce) to taste
Pinch of salt (only if needed after tasting)
Directions:
- Combine all ingredients in a bowl and whisk together.
- Taste, and add a pinch of salt if needed
